engine oil question

The ROM says to a variety of engine oils 10-30-, 10-40, 20-50 etc. 
Other than working in higher temps.,  what is the big difference
between them?  I put in 10-40, but and thinking of replacing it with
20-50w(seems to be a standard number with Stags)  Am I safe using
10-40W?
